linking up my weekly cell phone pics with jeannett again!  apparently, this week is the food edition.  since hating my first couple weeks of the south beach diet, i figured something had to change.  i was spending hours in the kitchen making food according to the cookbook that ended up kinda blah.  then i started using pinterest for recipes and it has been awesome ever since!  i also bought another south beach diet cookbook that has had some great recipes.  i am still spending at least an hour and a half making dinner each night – maybe i’ll get faster?  and doing a couple sinkfulls (yep, sinkfulls is a word) of dishes every day.

considering that the most recent picture i had on my shelves was when silas was 6 months old, it was time for an update.  after this photo shoot months ago, i finally got a few pics printed and added them to the mix.  hopefully i’ll have more printed soon!

so yes, i’m on this healthy eating kick, but in the south beach book there is a recipe for pistachio bark – semisweet chocolate, melted, with pistachios mixed in, spread on a baking sheet, frozen, then broken into chunks.  so good.  soooo good!  i had a breaking point and had to lick the bowl.   and the spoon.

    Our week has been full of phone calls and estimates from the insurance company. The girls are still staying with different sets of grandparents until we can get the cleaning started(I think Id already mentioned we had a fire last Wednesday). Waiting is so hard to do, esp when your family is split apart. But God is giving the grace to get through each day. Every day after school the girls ask me “where will we be staying tomorrow?” and I just say- “we’re taking one day at a time right now and we’re thankful that we’re all safe.”
    Oh and BTW, your pics had my belly grumblin:) SO many yummys!

    I’m so glad you’ve been able to find some SB meals you like – having to eat blah food is a guarantee to wreck a diet! I did SB 6 years ago, lost a lot, have mostly stuck to the SB principles, and just recently went back on Phase 1 to shed some pounds that have creeped up over the years. On my blog I’ve shared a bunch of SB friendly recipes that I love – most are quick and easy because I don’t like to spend hours cooking.     Wow! Like the new product. I’ve seen similar results this past holiday with people crafting the mums into wreaths in the same style. Cool! So, you sew, I do not. Check out why I would love for you to be in my neighborhood, needle and thread in hand, this weekend:-)

    Love seeing your pictures every week. I have to say an hour and half on dinner, yikes!!! Good for you! Have you heard of clean eating? It’s super easy, super yummy, affordable and better than any other diet out there. Just a thought, we started doing if after my sis-in law had to for diabetes, it’s been great the kids love it (mostly) and most meals are around 15-20 minutes.

    Oh, your new ruffled mums are so pretty…we are on a health kick too and are eating very similar. I will have to try that South Beach Diet recipe for the pistachio bark when I am having a weak moment! Happy Friday!

    Pinterest has been saving our menu, too! I’m not south beaching, but pretty much the same deal. . had a baby 10 weeks ago. by the way, you look too fabulous! dunno what the diet is for! :P

    Great photos, Lindsey! Are you still doing that South Beach Diet and is that the food you eat? Looks amazing and I am a foodie all the way. Could you let me know because I’m all for healthful and nutricious (believe me, feeding 4 boys ages 13 to 6 1/2 (+ my hubby and I ) is no easy feat and I am always looking out for great new recipes. Thanks, in advance! And, keep up the great blogging posts – your blog makes my day every day!

    it is great to be healthier but i do not know why you are on a diet?! you are so tiny! the food looks great though!
